Handpicked ripe cherries are delivered to the Danche washing station, where sugar levels are measured with a refractometer to confirm optimal ripeness. After floaters are removed, the coffee undergoes a 48-hour fermentation before being de-pulped, leaving most of the mucilage intact—a defining feature of the Red Honey process.
The coffee is then dried slowly on raised African beds under increased shade for 14–18 days, with frequent turning to ensure even drying to a final moisture content of around 11.5%.
